Gun Lake Casino F&B General Manager- Sandhill Café in Wayland, Michigan

Position Summary:

The F&B Manager is responsible for all aspects of leading and directing the front-of-the-house team to deliver AAA Four Diamond level service. The ideal candidate will have a deep understanding of various cuisines while showcasing a thorough understanding of Four Diamond steps of service. Responsibilities include overseeing the performance and coordination of all work performed by the Team Members. This role requires effective leadership skills, creativity, attention to detail, and a passion for delivering an exceptional dining experience.

In this Role:

  • Responsible for always practicing, supporting, and promoting Gun Lake Casino’s “Unsurpassed Service Standards.”

  • Maintain a high level of personal integrity on and off duty.

  • Practice teamwork, support fellow Team Members, and create an energized, positive, team-oriented work environment.

  • Interact with Guests in a friendly and courteous manner and handle all Guest opportunities.

  • Must be able to effectively communicate both written and verbally with Guests, Team Members, and Management.

  • Responsible for participating in the creation of annual budgets and managing and leading the unit in all forecasting and cost controls to meet or exceed units operating financial potentials and goals.

  • Conduct group and individual training regarding policies and procedures on an ongoing basis. Set daily, weekly and monthly goals and opportunities and lead the unit to achieve the desired result.

  • Set schedules and specific job duties while maintaining Team Members’ hours for proper staffing as defined through established service standards.

  • Evaluate and oversee job performance of Team Members.

  • Coach and counsel Team Members who are not meeting standards. Understand the steps of discipline.

  • Practice and observe safety rules and regulations and ensure Team Members reporting to you do so as well. Ensure Team Members are trained on materials in the book.

  • Treat each individual with care, dignity, fairness, respect and recognition in an Unsurpassed manner.

  • Have knowledge of where your SDS booklet is located for your department and understand its contents. Ensure Team Members are trained on materials in the book.

  • Display knowledge of all emergency procedures.

  • Responsible for handling any Team Member or Guest opportunities.

  • Responsible for maintaining cleanliness and sanitation standards in accordance with department policies and Health Department regulations.

  • Work productively with direct supervisor and peers.

  • Display and encourage teamwork in the department.

  • Work with management team to control cost.

  • Communicate on a consistent bases with all managers, keeping the abreast of all room activities.

  • Adhere to all policies and procedures as set forth by the Director of Food & Beverage.

  • Ensure that all Team Members are knowledgeable of and adhere to all Gun Lake Casino’s standards.

  • Motivate and influence Team Members by displaying a positive attitude, problem-solving skills and upholding Department’s conduct expectations.

  • Hold daily huddles with Team Members to communicate pertinent information.

  • Provide support, material, supplies, etc. to ensure Team Members have the proper tools to provide Unsurpassed Guest Service.

  • Maintain excellent grooming and uniform standards.

  • All other duties as assigned.

Essential Qualifications:

  • Must be 21+ years of age.

  • High School Diploma or GED required.

  • At least five (5) years of food and beverage service experience in a fast-paced, specialty retail restaurant required. Casual and Fine Dining service styles preferred.

  • At least three (3) years as a restaurant General Manager or five (5) years as a restaurant Assistant General Manager having full P&L responsibility required.

  • Ability to speak, write, and communicate in English required.

  • Comprehensive understanding of various food, wine, spirits, and beverage knowledge with some culinary background or experience preferred.

  • Comprehensive administrative knowledge, which includes profit and loss statements, cost control, menu planning, budgeting, training, inventory control, and sanitation.

  • Must hold/maintain certification with handling (ServSafe) and Alcohol Awareness (TIPS) and the ability to gain/maintain training requirements from both programs.

  • Availability and willingness to work extended hours including nights, weekends, and holidays as business requires.

  • Demonstrated ability to work independently with minimal direction.

  • Must be able to obtain a gaming license with the Gun Lake Tribal Gaming Commission.

Physical Requirements:

  • Requires normal, corrective vision range, the ability to see color, and the ability to distinguish letters, numbers, and symbols.

  • Ability to read, write, and input data into the computer.

  • Ability to climb, bend, reach, walk, and stand for the duration of the shift.

  • Manual dexterity to operate job-related equipment.

  • Must be capable of lifting 50 lbs with or without assistance.

  • Requires normal sense of smell, taste, touch, and hearing.

  • Ability to sit and work on a computer for long periods of time.

Work Conditions:

Work is typically in an office environment or out on the casino floor. Work areas may be warm, cold, or noisy. Tasks may be required to perform from a sitting or non-sitting position in a confined area. Team Members may be required to stand, walk, lift, reach, push, pull, and grasp.
