工作职责

• 在遵守规章制度和卫生标准和的基础上管理食品和厨房事务的营运，协助员工培训，监督食品的准备和外观的一致性，从而满足顾客的期望。

• 遵守当地的卫生和安全法规，或其它适用的规定，以及品牌规范和当地的规章制度。

• 对以下各项的水平进行持续性的控制和分析：

o 销售

o 成本

o 食物发放

o 食品的质量和外观

o 设施和设备的条件和清洁

o 客人满意度

o 市场工作

• 按照品牌标准，协助部门制定培训计划并编写培训材料，为员工提供培训，促进团队之间的合作。

• 为迎合当地市场与餐饮部设计时令菜单、餐饮搭配。

• 协助行政总厨制定菜谱，并对餐饮部制作和售出的所有菜肴的成本保持最新的准确记录。

• 协助行政总厨制定食品制作和管事运作目标，以及战略、工作程序和政策。

• 与行政总厨一起决定所有食品、材料和设备的最小和最大库存。

• 协助行政总厨按照洲际酒店集团指导方针制定所有食品和设备采购的标准。

• 参与酒店收益计划和市场项目的准备工作。

• 了解餐饮业的趋势、体系、惯例和设备。

• 进行人力规划和管理需求。

• 人员编制和部门预算管理。

任职要求

• 展现出与客户、员工和第三方进行互动的能力，以高度体现酒店、品牌和公司的形象。

• 持有当地政府规定的含酒精饮品知识课程证书或食品服务许可证或有效的健康或食品上岗证。

• 具有解决问题，推理，号召，组织和培训能力

• 具备7年或以上酒店相关职工作经验，或与此相当的教育和相关工作经验结合的背景。
