JOB DESCRIPTION AND POSITION REQUIREMENTS: A three-year Postdoctoral Scholar position for the project "Oleoproteins: a new class of functional ingredients for natural/clean label applications" is available in the Food Science Department at The Pennsylvania State University (University Park). The project is funded by the United States Department of Agriculture (USDA), National Institute of Food and Agriculture (NIFA), Agriculture and Food Research Initiative (AFRI), Competitive Grants Program on Novel Foods and Innovative Manufacturing Technologies (A1364).

Members of the Harte lab found that novel processing operations initially used to dissociate protein quaternary structures, led to the formation of stable protein-lipid functional complexes, so called "Oleoproteins". Surprisingly, these oleoproteins exhibited exceptional potential in their functionality for food and non-food applications. The long-term goal driving this project is to create solutions to fulfill the need of natural ingredient diversification. The development of natural functional food ingredients, including oleoproteins, will benefit the global agricultural and food sectors, and will demonstrate once more that the food industry strives through research and innovation.

Interested applicants must have a Ph.D. in Biological Systems Engineering, Food Science, or related fields completed by the start date. Desired qualifications include previous experience in rheology, and the physical chemistry of proteins and lipids. The successful applicant will have access to modern research laboratories and pilot plants in the Food Science Building, as well as the Huck Institute of Life Sciences, and the Materials Research Institute at Penn State University.

Applicants should have a strong publication record, exhibit creativity in their work, and enjoy collaborative interactions. The position should be filled after September 15, 2024, for one year with renewal based on performance. Review of applications will begin immediately and continue until the position is filled.
