Director of Beverage

SUMMARY

The Director of Beverage will collaborate with the Food & Beverage leadership team to develop beverage menu programs, ordering and inventory processes and controls of all alcoholic beverages for the property. The focus of the role will be to strategically manage the daily operations of the department with a pro-active approach and gracious attitude. This role will contribute to the organization as an active business partner that is responsible for supporting the company's goals, objectives, vision, mission, and values.

ESSENTIAL FUNCTIONS

Major areas of responsibility/ management include, but are not limited to:

  • Interview, select, train, supervise, schedule, mentor and counsel associates accordingly

  • Prepare and conduct pre-shift meetings communicating pertinent information to the associates, before each shift and event

  • Coordinate monthly departmental meetings associates, as well as department heads responsible for areas that will provide beverages

  • Collaborate with the Director of Food & Beverage to design appropriate pricing strategies

  • Review inventory including invoice accuracy, pricing structures, POS programming, cost controls par levels maintained, appropriate ordering of quantities and the beverage physical inventory process

  • Provide direct service to guests as needed, including, but not limited to, serving tables, bussing tables, seating guests, bartending when needed

  • Establish and oversee alcoholic beverage training for front-of-house Food & Beverage staff, including general knowledge, list-specific knowledge and responsible Beverage Service techniques in accordance with CA ABC regulations

  • Establish and maintain relationships with key vendors to ensure access to premier products and exclusive opportunities

  • Partner with GM’s and Department heads to create cocktail programs for each outlet

  • Assist as manager in restaurant outlets as needed

    QUALIFICATIONS

  • Bachelor’s Degree Preferred

  • Knowledge of various POS systems

  • Minimum of 10 years’ service experience, with 5 years' of leadership experience in a luxury venue and/or craft cocktail program environment

  • Previous beverage buyer experience required

  • Advanced skills in Word, Excel, PowerPoint, Micros and Outlook; daily use of nearly all programs will occur

  • CA ABC Certification

    PHYSICAL REQUIREMENTS

    Most work tasks are performed indoors. Position requires walking and giving direction most of the working day. Must be able to exert well-paced ability to maneuver between functions occurring simultaneously. Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity. Must be able to lift up to 30 lbs. on a regular and continuing basis. Must be able to lift trays of food or food items weighing up to 30 lbs. frequently. Must be able to push and pull carts and equipment weighing up to 250 lbs. occasionally.

The pay scale* for Director of Beverage is $90,000- $95,000

*The pay scale is the base salary or hourly wage range, exclusive of incentive pay such as commissions, piece rates, gratuities, and the like, that Montage reasonably expects to pay for the position.
