ARAMARK Alo Fine Dining Executive Sous Chef in HIGH POINT, North Carolina

Job Description

Aramark Destinations at the Kahn Hotel at High Point University is currently seeking an Executive Sous Chef for Alo, HPU?s fine dining restaurant.

The Sous Chef will report directly to the Executive Chef and will be responsible for the preparation of high-quality meals according to company standards, menu specifications and production schedules set forth by the Executive Chef.

Leadership ? Ability to effectively motivate, mentor, coach and counsel others to perform well.

Client & Guest Relationship ? Lead by example and exemplify 5-Star professional standards of conduct and service. Acknowledge and be responsive to client and guest request and concerns and resolve accordingly. Educate staff on professional appearance, policies, and excellence of service standards. Deliver and model WEST as foundation for excellent customer service.

Financial ? With oversight, develop, recommend, manage the kitchen food and labor cost controls processes. Maintain accurate record-keeping to track food, labor and operating costs. Monitor, track, and adjust labor models to align with business levels.

Job Responsibilities

  • Set and maintain a very high standard of food quality in preparation and execution.

  • Ensure food is handled in a respectful manner and is processed and stored in accordance with SNHD regulations.

  • Adhere to and enforce company policies and statutory requirements with regard to health and safety, sanitation, fire procedures, and HACCP.

  • Ensure safe and proper use of equipment.

  • Ensure kitchen equipment is in good working order and address any equipment issues promptly.

  • Maintain a high standard of cleanliness and sanitation in and around all culinary work areas.

  • Teach, develop, and support the culinary team as needed.

  • Work with Restaurant Manager and front-of-house staff to ensure a positive guest experience.

  • Maintain food cost, labor cost, supply cost, and other controllable expenses within budget guidelines.

  • Minimize waste and spoilage by monitoring occupancy forecasts.

  • Conduct daily pre-shift meetings with staff.

Qualifications

  • High School Diploma. Culinary degree desirable or equivalent combination of education and work.

  • 2 years minimum of prior relevant kitchen supervisory experience

  • Previous experience supervising employees, documenting and enforcing food safety procedures and workplace safety procedures.

  • Previous experience purchasing, receiving and inventory control.

  • Serve Safe Certification and Allergy Awareness training strongly preferred.

  • Computer Skills / Technical Aptitude ? proficiency in computer technology, i.e. email, MS Word, Excel

  • Training ? ability to share knowledge and act as a resource in teaching others to perform tasks efficiently and safely.

  • Quality Control -adheres to standard recipes and techniques for food preparation and presentation which help to assure consistently high quality and to minimize food costs; exercises portion control for all items served.

  • Organizational & Time Management Skills ? ability to appropriately schedule time to meet job demands, multi-task, prioritize, follow through, and work efficiently with limited supervision.

  • Composure ? ability to maintain composure and work under pressure, managing stress to meet business demands. Interpersonal skills to deal effectively with guests, management and team members in a calm and professional manner.

  • Attention to detail ? ability to follow instructions and achieve thoroughness and accuracy when accomplishing tasks.

  • Communication Skills ? ability to effectively listen and communicate professionally, both verbally and in writing.

  • Must be able to work a flexible schedule including evenings and weekends.
