The Colorado State Veterans Community Living Center at Rifle is located on Colorado's western slope in the scenic Colorado River valley. Rifle offers a mild climate, with plenty of clean mountain air and beautiful blue skies. Amidst this setting, the State Veterans Community Living Center at Rifle provides 89 beds of skilled nursing care, including a 18-bed Special Care Unit for residents with Alzheimer's Disease or related conditions. Serving veterans, their spouse and eligible "Gold Star" parents, we are committed to caring for the whole person by addressing the personal and social needs of each resident, as well as their physical and medical requirements. All staff members of Rifle are committed to providing a life of qualify and dignity for every resident. The Nutrition Services Department will provide a full-service dietary department for 89 Nursing Home Residents, Catering, and staff meals. It is to see that three balanced, nutritious meals daily, meet all dietary needs of all residents as per physician orders and within state and federal regulations. It is also to maintain sanitary and safe work units.

About this Position:

Manage and supervise the total operation of the dietary unit, production, and Food Service. Ensure that the dietary and nutritional needs are met according to physician’s orders and state and federal regulations. Plan menus, order supplies, attend patient-care meetings, complete required documentation on residents, maintain required records and staffing control expenses within budget allowances, and maintain a sanitary and safe environment for the production and dining services. In addition, evaluate and establish protocols for an efficient environment that meets or exceeds the VA standards and the resident needs. This position is part of the facility leadership team, attends all interdisciplinary meetings and is part of the QAPI committee.

Duties include:

  • Manage and supervise Rifle’s two Dining Service units to include hiring, training and corrective actions for all dining department shifts 7 days per week.

  • Accountable for writing and signing employee performance plans and appraisals, determining pay, providing documentation to support corrective and disciplinary actions, and resolving informal grievances.

  • Designs, updates, writes, analyzes, and implements processes for production and dining services according to industry standards and professional judgment.

  • Establishes and maintains policy and procedures for the 2 units of Dining Services and Production.

  • Evaluate and decipher industry standards that pertain to the nursing home especially as it relates to federal, state, and veteran administration regulations.

  • Utilize judgment and resourcefulness in tailoring the production unit and the dining service unit. These are to meet or exceed survey standards while providing the necessary tools to the staff to conduct their jobs in the most efficient manner possible.

  • Per CMS regulations this position is required to attend weekly Care Plan Meetings and is part of Rifle’s Interdisciplinary Team (IDT).

  • Teaches current rules and regulations from the state and federal health departments.

  • Ensures that the budget remains sound when updating menus to include fresh produce during all seasonal changes.

  • Plan balanced, nutritional menus for 89 residents. Plan and write extended menus in collaboration with the Registered Dietician to include special, therapeutic, and mechanically altered diets.

  • Plan and select alternate menus for all meals.

  • Offer a wide selection of delicious and varied snacks.

  • Lead the Resident Food Committee monthly and make updates and change menus to reflect seasonal change and resident requests.

  • Collaborates with all departments to produce, serve and clean up after all meals.

  • Coordinates room tray delivery, hydration carts and snack delivery with nursing and activity staff.

  • Oversee the design and implementation of training and establish a calendar by position to set training dates for food service personnel.

  • Holds weekly departmental meetings to review continuing issues and introducing new information.

  • Develops a formal agenda and presentation so all staff can have easy access to the information.

  • Ensures that all staff are ServSafe certified.

  • Invites different departments including speech, Rec therapy or activities to attend one weekly meeting per month to discuss diets, outing or special equipment.

  • Implements and maintains par levels on food supplies, order, and work with CORE (Colorado Operations Resource Engine).

  • Designs and has available an emergency plan for alternate food supply sources in the event the normal supply sources are unable to deliver and an unexpected function arises.

  • Tracks weekly inventory.

  • Works with multiple vendors to assure best quality product and price.

  • Maintains knowledge of different accounting systems and ordering systems.

  • Provide delivery of dietary services.

  • May perform other dietary duties in furtherance of the objectives, mission of the dietary department, facility and/or division.

  • Other duties as assigned.

Minimum Qualifications, Substitutions, Conditions of Employment & Appeal Rights

Minimum Qualifications:

Experience Only:

  • Five (5) years of relevant experience in an occupation related to the work assigned to this position

OR

Education and Experience:

  • A combination of related education and/or relevant experience in an occupation related to the work assigned equal to five (5) years

  • Preferred Qualifications:

  • ServSafe Manager Certification

  • Experience working in a Hospital or Living Center setting

  • HIGHLY DESIRABLE COMPETENCIES:

  • Knowledge of institutional food service procedures and practices,

  • Knowledge of health requirements in the operation of a food service unit,

  • Knowledge of health hazards in food service and the necessary precautionary measures,

  • Knowledge of weights, measures, (e.g., food scales, measuring cups, and spoons) and food measurement techniques.

  • Knowledge of techniques used in mixing food (e.g., gelatin, pancake batter, salad dressing, scrambled eggs, etc.).

  • Knowledge of meat and vegetable preparation methods.

  • Knowledge of cooking methods (e.g., frying, deep-fat frying, boiling, or baking).

  • Knowledge of the use of kitchen utensils in serving or portioning meals.

  • Knowledge of food safety related to handling and storing cooked foods, serving and storing temperatures, or reading food thermometers.

  • Ability to read English at the level necessary for interpreting and understanding written recipes, menus, nourishment labels, diet slips, portioning sheets, and policies and procedures.

  • Ability to perform basic mathematics (addition, subtraction, multiplication, and division) as related to calculating or converting units of measure for determining proper amounts of food ingredients for mass food production.

  • Ability to clean, cut, cube, grind, and tenderize meat.

  • Ability to clean, peel, dice, grate, slice, and chop vegetables.

  • Ability to measure food ingredients using food scales, measuring cups, or spoons.

  • Ability to mix food items (e.g., gelatin, pancake batter, salad dressing, scrambled eggs, etc.).

  • Ability to boil food items and operate a jacketed steam kettle in a safe and effective manner.

  • Ability to fry food items and operate a grill or tilt grill in a safe and effective manner.

  • Ability to bake food items and operate a gas, rotary, or convection oven in a safe and effective manner.

  • Ability to understand and execute oral and written instructions,

  • Interpersonal skills,

  • Teamwork skills.

Conditions of Employment:

  • Full Background - Name check, TRAILS, Drug Screen and Fingerprinting

  • Must be 21 years of age or older

  • Essential Services Designation - Must be available for call back to perform essential and/or emergency services of the agency without delay or interruption

  • Must pass a pre-placement physical/medical screening: TB Test

  • Travel may be required to trainings

  • Must be available for shift work
