Job Description

To ensure that all Banquets and other Food and Beverage outlets have the required quantities of sanitized equipment/supplies to meet the business needs of the hotel.

This position is based out of the Trinity Convention Center.

Responsibilities

+ + Responsible for the efficient and effective running of the Steward Department ensuring that operating costs are minimized.

  • To execute company and hotel policies and procedures relating to the Stewarding Department, thereby ensuring that the services provided achieve the established standards of performance, within the agreed budgetary controls.

  • To advise the Executive Chef on all matters relating to the Stewarding Department.

  • To collaborate with Executive Chef on the purchasing of all cleaning supplies, china, glassware, cutlery and equipment.

  • Taking and calculating of material stock (inventory) as required.

  • Reporting to the Executive Chef all breakages, cleaning supply consumption, etc.

  • In conjunction with the Executive Chef, establish standards of performance for the Stewarding Department.

  • Maintaining all equipment to a high standard, i.e.: dishwashers, burnishes, etc., and reporting to maintenance any defects.

  • Function as direct liaison with Facility Powerhouse, Engineering and Maintenance team on all aspects of repair & maintenance for both Facility & Trinity owned equipment.

  • Coordinate repairs & maintenance between Convention Center team and Trinity staff. Follow-thru as needed on a continuous basis to project completion.

  • Assist in the planning & oversee expediting of all prepared food products from culinary areas to food/event distribution sites.

  • Plan & oversee sanitation standards for all culinary areas including production, preparation, dishwashing, and concession stand locations throughout the facility. Assist the Executive Chef with maintaining the standards of sanitation for all Trinity F&B areas.

  • Ensure dishes, small wares, and utensils are properly cleaned, sanitized, dried, and returning to their designated areas.

  • Assist with receiving, storage, and distribution of products when necessary.

  • Maintain cleanliness of all Trinity areas throughout the day and ensure that all areas and equipment is cleaned to standard at the end of the production day.

  • Ensure dish out areas & breakdown areas for events are properly set up prior to events.

  • Ensure breakdown of all banquet events is completed to standard.

  • Ensure that plating lines and necessary equipment is properly set up for plated events.

  • Direct and monitor labor to achieve all of the proceeding duties and responsibilities.

  • Qualifications

    • Must have 1-2 years of current management experience preferred in a high volume F&B hotel setting of 25+ department employees
  • Management of Temporay workers/payroll processes is a plus

  • Experience with management of P&L; Inventory Management of China, Glass and Silver

  • WORK ENVIORNMENT

  • Interior of hotel, in all Food and Beverage areas, with exposure to humidity and extreme temperatures.

  • Exposure to Food and Beverage hazardous cleaning chemicals.

  • Exposure to food items and beverages.

  • Must be flexible in scheduling to include, nights, weekends, and holidays
