ARAMARK Assistant Food Service Director - Lewis in Buckeye, Arizona

Job Description

The Assistant Food Service Director is a management position responsible for developing and implementing dining solutions to meet customer needs and tastes. Oversees and manages dining operations where customers order prepared foods from a menu.

This position is due to start late August - mid September 2024.

Job Responsibilities

  • Provides professional food service for customers following established standards and practices associated with completing OP-X roadmap on a consistency basis.

  • Oversees and assumes responsibility for daily operations, and ensures compliance with the policies, procedures, guidelines and directions provided by the Food Service Director(s).

  • Delegates specific daily tasks to each supervisor or inmate based on operational needs in a manner that maximizes operational efficiency.

  • Oversees, and learns to perform, all the duties of co-workers and understands how each specific area functions within the department. Performs the duties of any subordinate as necessary in order to maintain operational efficiency in line with OP-X.

  • Monitors the 5/P's (Population, Pulls, Production, Portioning, and Post Analysis), storage, storage, serving and distribution of food, and assures that food handling practices are consistent with sanitation, quality, quantity and safety guidelines as outlined in OP-X.

  • Continually checks the inmate meal preparation line, and ensures the presence of supervisors, and inmate workers. Monitors portion control, responds to questions, instructs supervisors and staff, and maintains an understanding of the effects of cost control, waste, and pilferage.

  • Maintains and reviews appropriate business records, logs, charts, menus, and other pertinent information in accordance with set standards.

  • Arranges for, and assists in, the training of new supervisors for all areas in proper service techniques, portion control, dish room procedure and proper sanitation in all areas.

  • Correctly utilizes and sanitizes equipment, as well as assures correct usage and cleaning of equipment by others.

  • Ensures the completion of daily, routine, and special cleaning projects as assigned or scheduled. Maintains all assigned areas in a clean, neat, and orderly manner.

  • Assists in the development of, and maintenance of, all written departmental policies, procedures, and guidelines, and all applicable local, state, and federal standards.

  • Actively works to ensure full compliance with departmental policies, procedures, and guidelines, and full compliance with the policies, procedures, and guidelines developed by the County, the Department of Health, the American Corrections Association (ACA), the National Sheriffs' Association, the American Medical Association, and the American Bar Association.

  • Develops and maintains a close, communicative working relationship with the Food Service Director, and other personnel so that all activities can be planned and coordinated to enable the department to function as an integrated whole. Maintains a similar relationship with contracted service areas of the component, and maintains control over these areas.

  • Adheres to, and ensures that all staff adhere to, all local, state and federal standards with regard to workplace safety. Actively works to ensure full compliance with prescribed safety practices and procedures for equipment and designated work areas. Conducts monthly Safety Training for all Supervisors and documents same.

  • Participates in professional development activities and demonstrates a positive (can do) attitude. Attends required meetings and participates in committees as requested. Conducts in-service training programs as scheduled.

  • Participates in OP-X activities, and actively works to improve Aramark and customer satisfaction levels.

  • Maintains Aramark, client, and employee confidentiality.

  • Performs related tasks as assigned by the D.M. or FSD.

Qualifications

CRITICAL SKILLS:

  • Knowledge of food preparation theory and practice. Knowledge or organizational policies, regulations and procedures to maintain inmate and staff, safety and security. Knowledge of food service equipment and instruments to produce safe food. Knowledge of common safety hazards and precautions to establish a safe work environment.

  • Skill in applying and modifying the principles, methods and techniques of professional food service to provide compliance with customer specifications. Skill in English grammar and spelling. Skill in identifying problems and recommending solutions. Skill in preparing and maintaining records, writing reports, and responding to correspondence. Skill in developing and maintaining department quality assurance. Skill in establishing and maintaining effective working relationships with inmates, correctional staff, and co-workers.

  • Ability to maintain quality control standards. Ability to react calmly and effectively in emergency situations. Ability to interpret, adapt and apply guidelines and procedures. Ability to communicate clearly. Ability to maintain confidentiality of sensitive information. Ability to file and maintain records, files, logs, reports and other correspondence.

EDUCATION & EXPERIENCE:

  • College Degree Preferred

  • High school diploma or GED.

  • Completion of course in food service sanitation and safety preferred.

  • Prefer five years of experience in food service in an institutional setting. Two year's previous experience in food service setting required.

  • Previous experience in correctional setting preferred.

  • Supervisory experience.

CERTIFICATE/LICENSE:

  • Valid State Drivers License
