GENERAL SUMMARY AND PURPOSE:

Under general supervision, responsible for preparing food items for patients, cafeteria and catering according to production schedule. Food is to be prepared in accordance with established menus, recipes and sanitary standards. May assume additional responsibilities in absence of Nutrition Services Supervisor or Manager.

SKILLS, KNOWLEDGE, EDUCATION AND EXPERIENCE:

  • High school diploma or equivalent preferred.

  • Culinary arts training helpful.

  • Two years of experience in food production required.

ESSENTIAL FUNCTIONS:

Knows, understands, incorporates, and demonstrates the Organizational Mission, Core Values, and Vision in behaviors, practices, policies and decisions. Must have good knowledge of food production and the ability to closely follow recipes and make adjustments if required. Must be able to anticipate levels of doneness and gauge times accurately. A high degree of aesthetics in the preparation of food products is necessary. Must have knowledge of equipment, sanitation and quality control procedures. Must have good communication skills in both oral and written English; both are required to give directions and specific work assignments to Food Techs and to prepare production worksheet. Must understand principles of growth and development over patient’s life span as it impacts food needs. Commitment to Coworkers (Teamwork) – treats one another with courtesy, honesty, respect and cooperation. Develops effective working relationships within the department and with other departments. Attitude (of Service) – Has a positive attitude, adapts to change, and is customer focused, polite and helpful. Acknowledges and interacts with all customers/patients/staff to accomplish excellent customer service. Communication – Effectively communicates to solve problems and promote teamwork. Follows individual task description and technical understanding of job tasks. Follows procedures, directions, production sheets, recipes, cleaning lists, policy and procedures and any other assigned duties. Food Safety – Proper Food Handling – Understands and follow P&P for proper food and equipment temperatures, hand washing, gloves, hair restraint, food storage, labeling and dating, proper cooling and reheating and cleaning. Proper Care and Use of Equipment – Safely operates and cleans all equipment according to training. P&P per assigned shift. Sanitation – Cleans equipment and work area according to assigned shift. Time Management – Accomplishes job tasks in given time frames, ability to flex for workload (census). Problem Solving – Positive response to change. Identifies opportunities and provide possible solutions. Seeks way to improve performance.
