Cornerstone Nursing and Rehab Center Inc Dietary Manager in Bagley, Minnesota

GENERAL DESCRIPTION Cornerstone Nursing and Rehab Center will meet the nutritional and dietary needs of residents to promote their optimal health. The nutritional needs of the residents will be in accordance with the recommended dietary allowances based on age, gender, activity level and disability and medical need. The dining experience will enhance the individual s quality of life. PRINCIPLE ADMINISTRATIVE DUTIES Compile required statistics for cost control and budgetary purposes Maintain department records on menus, diets, cardex, cost records, inventories and equipment Maintain an organized storage area with perpetual inventory Maintain records on cost of all items ordered and received Record the total number of residents, staff and visitors eating meals Verify all invoices of food and equipment received Participate in care conferences Assist with planning special meals, e.g. for parties, banquets, etc. Inspect department for compliance with federal, state and local laws and regulations Assure that only approved standardized recipes are used Plan a dietary program for efficient food production and food service Assist in developing a written plan of care for residents, identifying the residents needs, problems and goals Assure that residents responses to diets are recorded in the care plan and/or the medical record Perform duties as cook, as required, including assisting with dining rooms needs Complete dietary section(s) of the MDS Assure dietary orders are appropriate and current to residents needs/condition Order groceries according to menus Maintain documentation in resident progress notes related to residents nutritional status Interview residents to determine food preferences and dietary habits PRINCIPLE SUPERVISORY DUTIES Prepare staff schedules Monitor employee hours worked, attendance, etc Handle grievances and concerns within the department Establish meal schedules and work routines in cooperation with cooks and dietary aides Assure new employees are properly orientated and trained to position Interview and hire applicants for dietary positions Conduct employee performance evaluations Train staff on safety precautions to maintain a safe working environment Train staff on Safety Data Sheets in regards to chemicals used PRINCIPLE RESPONSIBILITIES Manage the dietary department Assure sanitation and proper temperature of refrigeration and freezer equipment and storage areas Provide cooperation of dietary operations with the other departments Participate in Quality Assurance Monitoring and assure compliance with infection control and safety policies and regulations Assist in the selection of vendors, in order to assure an economically run department Direct and supervise food production and service Maintain department sanitation Participate in Quality Assurance Committee, PIP and department head meetings Attend workshops, as required Supervise the assignment of duties Assure sufficient staff employed to prepare and serve all meals Maintain the standards of quality and quantity of food served Other responsibilities as assigned by Administrator Review and be knowledgeable with all departmental policies, procedures, and job descriptions, standard and new Attend all required in-services Complete all training, as assigned, within the specified time frame Maintain positive relations with residents, visitors, families, and staff Maintain confidentiality Comply with all policies and procedures, as set forth in in the Policy and Procedure Manuals Comply with applicable standards of behavior and conducts including, but not limited to, standards of employee conduct and professional code of ethics Use proper protective equipment, when required Organize department functions and activities WORKING HOURS Hours vary and may include evening, holidays and weekends Hours scheduled include office work and at times may require employee to be a working supervisor Other hours as assigned by the Administrator
