National Medal of Honor Museum

The National Medal of Honor Museum in Arlington, Texas will serve as the premier national institution dedicated to the stories, impact, and legacy of the service members who went on to become Medal of Honor recipients. Neither a war memorial nor a military museum, the National Medal of Honor Museum is a humbling endeavor that will take visitors on a narrative journey through the life stories of ordinary people who made extraordinary choices above and beyond the call of duty. The museum footprint encompasses over 100,000 square feet, cornering five acres of waterfront in Arlington, Texas. Over 31,000 square feet of Exhibition Galleries as well as dedicated spaces for meetings, symposiums, memorials, and ceremonies. The museum is also headquarters of the National Medal of Honor Griffin Institute, an organization that addresses our nation’s character gap and fills it by focusing on the values and valor of the Medal of Honor and all who have earned it. Role Summary

The Executive Chef is responsible for directing and administering the planning, preparation, production, and control of all culinary operations at the National Medal of Honor Museum. The Executive Chef is also responsible for all culinary components for special events annually in our event space. The Executive Chef will report to the General Manager.

Essential Functions

  • People and product focused hands-on management of day-to-day operations of all prep spaces and kitchens. Implements and enforces all departmental and organizational policies and procedures. Assures staff compliance with all standards, policies and procedures.

  • Professionally leading associates utilizing Sous Chef and Lead Cooks through planning and scheduling of work assignments and performance development. Administers training and development, performance reviews, corrective counseling, and payroll accountability.

  • Plan innovative menus, maintaining financial responsibility for the menu mix and culinary labor costs. Analyze menu and food costs and the preparation of cost and quality efficient menus/specials. Prepare reports regarding food and menu analysis.

  • Prepare cost-saving annual budgets and ensure all fiscal responsibilities are met.

  • Practice safe work habits, follow all safety policies and procedures and regulations, complete company-wide safety training and additional job specific safety training.

  • Oversee inventory management to assure all outlets are always adequately supplied. Performs periodic inventory. Requisitioning and purchasing. Maintains effective vendor relationships.

  • Oversee the sanitation standards of all kitchens to assure compliance with local health department standards and company standards.

  • Direct interaction with high level clients.

  • Oversee all culinary employees to achieve budgetary, food quality and customer service expectations.

  • Must have the ability to make effective use of available resources, including time, labor and materials, and adjust methodologies to maximize productivity.

  • Assists in ensuring schedules are complete based on a forecast.

  • Must communicate and work closely with Event Sales Director and General Manager

  • Crosstrain those within the department while encouraging, reinforcing, and supporting your peers and team.

  • Demonstrates competent product knowledge by correct storing and handling of all perishables, maintaining quality, security, value and integrity.

  • Travel up to 25% to other Legends properties to support major events, openings, and/or business needs

  • Performing additional related duties, tasks and responsibilities as required.

Qualifications

To perform this job successfully, the successful candidate must be able to perform each essential duty below at the highest levels. The requirements listed below are representative of the knowledge, skill, and/or ability required.

  • Three (3) years’ experience as an executive chef in a high-volume food industry or five (5) years’ experience as an executive sous chef in a high-volume full-service food operation.

  • Three (3) years’ experience in offsite catering preferred.

  • Degree or certification from an accredited culinary arts institute, or apprenticeship certification from the American Culinary Federation preferred.

  • Must have Certified Food Manager (CFM) license or be able to attain within 60 days of start date.

  • Proven track record in improving kitchen efficiency, quality, food and labor costs.

  • Must have excellent managerial, financial analysis, team building and communication skills/customer service.

  • Must have knowledge of kitchen sanitation, operation and maintenance of kitchen equipment.

  • Must be detail-oriented and extremely organized with the ability to learn new programs and procedures quickly.

  • Must be proficient in Microsoft Word, Excel, and PowerPoint.

  • Must be flexible to work extended hours due to business requirements including nights, weekends and holidays.

  • Must be open to providing incidental or short-term support to other facilities in the event of a business need.

  • Bilingual in English and Spanish, a plus.
